How to use it
- 01Pick the one routine that breaks most when you are not in the building, and write that page first.
- 02Fill it in with the person who actually does the job, not from the office. They know the real order.
- 03Hand the finished page to someone who has never done it and watch once. Every question they ask is a missing step.
- 04Add a line to the manager's daily checklist — check the page still matches the shift — so it stays alive.

- A step is finished when someone else can see it was finished: 'flat top scraped and down', not 'clean the flat top'.
- Steps in the order you would teach a new starter, not the order they appear in the building.
- Date the page and read it every 3 months. A stale page records how you used to run, not how you run.
